Happy New Year to all.  We are back and open and sorting through the Holiday Hangover to figure out just where all the wine went.  You'll have to wait until next week for our announcement of which wine region we are focusing on for the new year, but you can start tasting again tonight.

Join Sara and I from 4pm to 8pm and taste some current favorite reds from Argentina.  The wine flight includes three wines tonight:  Bonarda, Tempranillo and a Reserva Malbec.  More details below.

We will be making some exciting changes in how we do business at the shop and online this year.  And there just might be another big announcement in the next few months about how cork will be better serving Portland's wine needs.  But until then...some classes to sign up for are listed below.

See you soon.

SARA'S CORNER
tapasI'm still recovering from a very happy New Year's break, so nothing major to report this week except, don't let the excuse that New Year's is over stop you from continuing to enjoy Sparkling Wine.  We still have a terrific selection of bubbly from around the world and I just restocked my favorite little Cremant from Stephane Tissot.  This is true methode champanoise sparkling made from Pinot Noir and Chardonnay, with classic biscuit and cream notes, all for just $23/bottle.  Let's keep the celebration going!
SCHOOL OF CORK · 2008 CLASSES

Some great chances to fulfill that New Year's Resolution to learn more about wine - sign up for one of our classes and start exploring.

WINE 101 for SERVERS · Thursday, Jan. 10 · $25/person · 6:30 PM
We've been hearing from a lot of you who wait tables around town how you wish there was a place for you to learn enough about wine and wine service to feel more confident in your job.  Well, here's your chance.  We'll start out with our Wine 101 format, including a sensory exercise (think 'licking wet rocks and sniffing dried banana chips') and a tea tasting to dissect just what is meant by acid, tannin and sugar.  Then we'll talk about proper wine etiquette, the do's and don'ts of tableside service and a few basics about the world's wine regions.  Hopefully, we can gear the discussion of specific wine regions to those represented by the wine lists from restaurants of class participants.  So bring a copy of your restaurant's wine list and a thirst to learn and join us for this fun evening.

INTRODUCTION TO THE WINES OF FRANCE · Thursday, Jan. 17 · $25/person · 6:30 PM
For the wine novice or the experienced drinker that has yet to dive into the many regions of the wine world's most historied regions, this class will give you a geographic overview of the wines of France.  We'll touch on Champagne, Burgundy and Beaujolais, the Loire, Bordeaux and Cahors and finish with the Rhone and Southwest.  A tasting of 8 wines will be included, along with some maps, some snacks and a lively discussion.  See you there.

WINE 101 for EVERYONE · Thursday, Jan. 31 · $25/person · 6:30 PM
This is our Introduction to Wine class, complete with an aroma sensory exercise, a dissection of what is meant by tannin, sugar and acid and a tasting of 5 unique varietals from around the world.  Come ready to put your own sensory memory to the tastes in a fun environment where you can ask that burning wine question that has been nagging you.  Some recent favorites are:  What does it mean when a wine is 'corked'? How can you tell if a wine is 'hot'?  Does all blush wine really get colored with women's rouge?  Join us to learn the answers and a whole lot more.

Email darryl@corkwineshop.com if you'd like to sign up for any of the above classes.  Include a phone number so we can call you back to get a credit card for confirmation.
Our warmest wishes for a happy holiday season,

Darryl, Sarah J, Sara Shaw, Morgan and Brandon
