Happy
Holidays, everyone. The season is now, and I know many of you are
scrambling around trying to find those extra little things that make
the holidays special. Like wine. And chocolate. And
fun gift items, such as a book on the hearty winter stews of Italy or a
special wine opener from Laguiole. If this sounds like you, then
be sure to stop in and visit us one more time before Christmas.
With the spirit of celebration in the air, we'll be tasting Sparkling Wines this Thursday AND Friday
from 4:00 to 8:30 PM. With later hours for after-work
shopping, you can stop in and stroll the aisles sipping bubbly while
browsing for gifts. It's our way of trying to make the hectic
season a bit more enjoyable for everyone. If you can't make it,
come by anytime for our Saturday Drop-In Tasting from 12 to 6 PM, as we'll be opening some of our favorite wines of the year to taste while you shop.
Finally,
we have two classes on the calendar for January, which would make
terrific gifts for those whose New Year's Resolution might be to learn
more about wine. We can prepare a gift certificate for you for
seats in the class, as long as space is still available.

Come taste Spanish, French and Italian Sparkling Wines. Thursday from 4:30 - 8:30pm, Friday from 4:30 - 8:30pm. Come both nights and taste 6 different wines!
We're
going to pair down the tasting format for this busy weekend and just
offer a flight of 3 Sparkling Wines each night. One Spanish, one
French and one Italian to make for an interesting International
degustation. The cost is $10 for the flight and chocolates will
be out to sample to help you decide on the right bar to choose as a
stocking stuffer! We'll open 3 different selections on Friday
night, so don't be shy and come both nights! Plus the staff will
all be on hand to help you with holiday wine selections.

A
small batch of Habanero Caramel Sauce is supposed to arrive tomorrow,
for those of you who didn't get in quick enough to score some of this
liquid love last week. Aside from that, instead of highlighting
any particular wine, I thought I would just remind everyone that with
stacks and stacks of cases of wine in the shop, you can drop in anytime
and we can mix together a holiday mixed case of reds and whites to meet
your particular mood. It only takes a few minutes, and all cases
receive our 10% case discount, whether they are mixed or full
cases. So let us do the work for you and put together a great
selection for entertaining or gift giving.

SCHOOL OF CORK · 2008 CLASSES

With
many people requesting the option of purchasing wine classes for
friends and family, we're releasing seats to two classes for
January. All of our classes are limited to 14 people and fill up
quickly, so if you would like to give the gift of learning to someone
in your life (or to yourself), stop on by or call us to purchase a seat
in the class.
WINE 101 for SERVERS · Thursday, Jan. 10 · $25/person · 6:30 - 8:30pm
We've been hearing from a lot of you who wait tables around town how
you wish there was a place for you to learn enough about wine and wine
service to feel more confident in your job. Well, here's your chance.
We'll start out with our Wine 101 format, including a sensory exercise
(think 'licking wet rocks and sniffing dried banana chips') and a tea tasting
to dissect just what is meant by acid, tannin and sugar. Then we'll
talk about proper wine etiquette, the do's and don'ts of tableside
service and a few basics about the world's wine regions. Hopefully, we
can gear the discussion of specific wine regions to those represented
by the wine lists from restaurants of class participants. So bring a
copy of your restaurant's wine list and a thirst to learn and join us
for this fun evening.
INTRODUCTION TO THE WINES OF FRANCE · Thursday, Jan. 17 · $25/person · 6:30 - 8:30pm For
the wine novice or the experienced drinker that has yet to dive into
the many regions of the wine world's most historied regions, this class
will give you a geographic overview of the wines of France. We'll
touch on Champagne, Burgundy and Beaujolais, the Loire, Bordeaux and
Cahors and finish with the Rhone and Southwest. A tasting of 8
wines will be included, along with some maps, some snacks and a lively
discussion. See you there.
